Jay Ingram, a respected scientist, just demonstrated something pretty cool.

 

He poured a regular cup of tea, removed the bag after it steeped for a minute or so, then shone a light on it at a shallow angle so you could clearly see the surface. As hot water rose and evaporated, some molecules were too large to float away as steam, but were too small to be pulled back under by gravity. They create those white dusty-looking molecules you see on the surface, and are actually analogous to small clouds. As they cool, they sink back into the tea only to be replaced by fresh ones. It's a complete convection system that makes a neat model demonstrating the same convection that creates clouds in our atmosphere.
