Check your temp gage. My Datsun did this, it would drive for 5 minutes before overheating. Your thermostat can be checked by removing it and placing it into a pot of boiling water. If it pops open, it's good. Of course if your sensor is bad, that's a $10 fix. Not sure if your fuel return is hooked up, but if you don't have your fuel lines wrapped, you will get vapor lock with your 240z. So it will sputter and due then only start up when it cools down. Buy fuel line insulation and install it.
