Problems with water temp sensor

I'm going to be buying a 76 280z from my cousin next month, it has minimum rust and not much work needs to be done to the engine to get it to good driving condition again. It does have a strange problem however. In the engine's current status you have to unplug the water temp sensor when you start it up, then wait for the car to warm up and plug the sensor back in. If we try and leave it pluged in before it is heated up, it sputters and dies. Is this probably just a case of getting a new sensor or something more serious?
