Water Temperature Gauge problem???

Ok well I just changed out my thermostat and coolant yesterday. The lower thermostat housing had a coolant leak. So I removed it and re-sealed it.I then reconnected everything. I ran all the air bubbles out but now my gauge is reading that my car is hitting 250. So i freaked out thinking the thermostat must not be opening. So i pulled it back out and boiled some water. I then tested the water temp with a cooking thermometer and the thermostat opened. So I then ran the car untill it started reading it was overheating. I stuck the cooking thermometer into the radiator and it only read about 140 but the gauge was reading 250. What kind of resistence should I be getting through the sensor when at operating temp?Also what kind of voltage should i be getting through the single wire?
