I've polished a few pieces of stainless used for shields in the past - you REALLY have to lean on it to get it going but when you're done it looks like a mirror Stainless is really nice, you did a good job! I havn't worked sheets of it before, I've done aluminum for other things (not heat related), probably takes a pretty good whack (or a decent brake to bend it) with a hammer to work it by comparison.
