My mother prepares a killer brain and I can eat the stuff all day long. It's obviously soft, kind of like liver patte if you've had that. Can't describe it more than that I'm afraid. We used to be in this hunting club that had an annual wild game dinner, and there was some meat there that was claimed to be beaver. It was good too.
