Educate me? (transmission question)

This question is for the automatic transmission experts...

 

My '77 280Z hybrid has a Chevy 350 and a TH350 transmission.

 

The guy who I bought it from said the transmission had a "2000 rpm stall converter."

 

What does this mean? I can see that in "normal driving," the transmission will shift at 2000 rpm, if there is not a lot of stress on the engine. Is the stall speed of an automatic transmission just that, the rpm that the transmission shifts when not under hard load?

How is the stall speed determined, and what are the advantages/disadvantages of a given stall speed?
