That being said... I think the highpoint was 'Frankenstein' in Death Race 2000. I have that DVD and watch it time and again. As well as some of his later Kill Bill stuff. I loved the reprise of Caine in the later generation Kung Fu (with Kermit, the guy who drove the Green late model Corvair...) One of the comedy sketches has him doing a kung fu fight in an otherwise empty store (no opponent), so he tells the cashier, "And now I must destroy your shop."
