MONGO510 Posted December 15, 2009 Share Posted December 15, 2009 Emergency Update!!! When I made my batch of Jam, I did a few things the recipe didn't call for. 1. Ground the all Peppers and the Carrots in a food processor to a small size. 2. I skimmed the solids that were floating just before putting in jars. 3. I also doubled the amount of Habeneros(be careful here)(optional). I am told that failure to do these steps results in a good tasting jam that looks like a root ball! LOL Sorry for the omission! My batch took on a different appearance than Johns. My middle daughter laughed and said it was root ball. All the chunks would float in the mix and took that set as it cooled. None the less, it is GOOD! Opened the first jar this morning, mixed it well so the chunks of bell, habenero, and shreds of carrot were equally dispersed, Mmmm mmmm... Polished off a 1/4 pint jar today already! I used the exact qty's the recipe called out for, not quite as hot as MONGO's. Next batch will be more habeneros and using the food processor to finely chop/prepare the carrot and peppers instead of a knife! Quote Link to comment Share on other sites More sharing options...

Now, usually I'd grimace from the thought of such a mixture, but I remembered this thread and thought, "why not?" Opened my 10oz jar of Mango-Plum-Ginger jam today, and now it's almost gone (had help from others too)! Good stuff, I like the spicy sensation with some sweetness. This one has jalapenos and Thai peppers, but it isn't very spicy at least to me. I'll have to find a recipe... BTW, the jam came Oregon. You guys are pioneers! kiwi303 Posted February 16, 2010 Share Posted February 16, 2010 mango plum ginger? Ginger isn't spicy, or hot... it's just tasty. Try Green tomato and Ginger... Green tomato (as in unripened red tomatoes, not green tomato as in the green when ripe ones) makes a flavourless bulk that doesn't fight other flavours, and provides acidity to allow the jam to set.
