Dash cover or New Dash?

Big difference in price. It all depends on your budget and expectations for final outcome. Full dash covers can be a good inexpensive option, but if you're looking for originality and money is no object, a new or recovered dash is the way to go. If you're really ambitious, check some of the threads on DIY dash repair.

There is no substitute for an original crack free, pliable dash with a deep color,  I am in that fortunate club post-36683-0-51988500-1385580817_thumb.jpg. But the choices came down to money and creativity, there is plenty of info on this forum as stated above. The complete/full dash skin is a practical solution if it is installed with care and good adhesive, I have seen some on Z cars and the only give away is the discolored glove box. FWIW.

DIY flocking seems to be pretty easy from what I've read online and fairly cheap too.

This is probably what I'll end up doing on my Z with a cracked dash.

Cap it. Why would you want to spend a lot of time on a component that does so little? Spend your time on the parts that make the car GO! Z dashes crack, so your $700 new one will to. My half dash cap is held on by the gauge pods and the defroster vents. No glue, no screws. It doesn't rattle or squeak. It has looked sharp for 20 years-no cracks.
